This cake is a winner and takes so little time to make. Plus it will work with any jam you have on hand. I used half orange-mango jam and half homemade strawberry. It was delicious! I added a bit of vanilla bean paste to the cake layer and kept the crumbles small. Complete keeper! I did use a 9×13 pan instead of a 9×9 pan that the recipe said to use. The cake was plenty thick in a 9×13 so I wouldn’t use a smaller pan. The cake to jam ratio would be way off. Here’s the recipe.
