Polish Honey Cake

I don’t know what came first, me finding this recipe or me buying an $11 jar of honey from whole foods. Either way, it all worked out because this Polish Honey Cake is a lovely cake. It’s moist, dense and flavorful. It wasn’t a knock it out of the park hit at work, some said it tasted burnt. I think the deeper and richer the honey you use, the stronger that bitter flavor may be. However, I thought it tasted very full and was a great accompaniment to a cup of cinnamon tea. The recipe called that this be baked in a bundt pan, but this worked out well in 2, 9×5 loaf pans. I think with a nice spiced frosting, this could be a nice cake to have at a Thanksgiving brunch or breakfast, if those exist.
