Despite the name this is 100% a naked pumpkin cake birthed from a loaf pan. After I brought in my baked pumpkin doughnuts, a coworker mentioned that he was a big fan of the pumpkin bread from Starbucks. Since I’ll take any excuse to bust out my stand mixer, I looked up a recipe and got to work. I used this recipe. Now, I’ve never tried Starbucks’ pumpkin bread, I’m sure mine was better, only because it was free!
My loaf still has clumps of flour (that’s what you get for not sifting!) and no lovely seeds on top (I forgot to buy them!) but it was still tasty. I especially liked how how this baked. My favorite thing about baking in loaf pans in the big fat crack on top. A sign that you’ve succeeded!
